summer sausage

4lbs venison-ground 1/4 med. onion-diced
1/4 tsp. garlic powder 1 Tbsp. liquid smoke
4 Tbsp. Tenderquick salt 2 cups water


Mix all ingredients well. form into log or sticks,refrigerate overnight.
(next day) Bake at 350 degrees for 1 hour in broiling pan. Eat warm or cold.

Note:to make salami,add 1/4 tsp. peppercorns and 1/2 tsp. mustard seed to ingredients.
