Mozzarella Meat Loaf

Mozzarella Meat Loaf

2 eggs, lightly beaten
1 cup saltine cracker crumbs
1 cup milk
½ cup grated parmesan cheese
½ cup chopped onion
1 ½ teaspoon salt
1 tablespoon dried oregano
2 pounds lean ground beef
1 can (8 ounces) pizza sauce
3 slices part-skim mozzarella cheese, halved
Green pepper rings and sliced mushrooms, optional
2 tablespoons butter, optional
Fresh parsley sprigs, optional

In a bowl, combine eggs, crumbs, milk, parmesan cheese, onion, salt and oregano. Add beef; mix well. Shape into a loaf and place in a greased 9 x 5 x 3 inch loaf pan. Bake at 350 degrees for 1 ¼ hours or until meat is no longer pink and a meat thermometer reads 160 degrees; drain.
Spoon pizza sauce over loaf; top with mozzarella cheese slices. Return to oven for 10 minutes or until cheese is melted. Meanwhile, if desired, sauté green pepper and mushrooms in butter; arrange on top of meat loaf. Garnish with parsley if desired. Yield: 8 – 10 servings.
